Happy Monday, gentle readers. I hope you had a fabulous weekend. We had another week of beautiful sunny but chilly weather here in Seattle. I have an annual “Pumpkin Party” every October that happened Saturday. It’s an autumn potluck where everyone brings something pumpkin or just an autumn dish they love. This year we had a packed house full of friends from lots of different parts of our lives. I had an incredible time. Standout dishes were pumpkin lasagna, pumpkin fried rice, pumpkin ravioli and pumpkin curry. My friend also made the most delicious mini pumpkin pies. A single pie was left this morning which I enjoyed with some coffee.
This week’s episode is on burnout. I have allowed work stress to become more than that, resulting in unexpected tears while trying to put my makeup on one morning. While this is embarrassing, it’s something I wanted to share because more than a few of my friends let me know they, too, are feeling burned out lately. The tech industry is in such a strange time right now with SO MANY LAYOFFS. AI is everywhere. There’s so many exciting and cool things that you can use AI for, but since it’s still mostly free I think we are overexposed. Anyways, I hope you find the episode helpful.

Monday: Nobu's Miso-Marinated Black Cod Recipe (Silky & Buttery) | The Kitchn , bok choy and sticky rice. *Above is the miso black cod recipe I make all the time. It’s stupid easy and tastes amazing; I have served it at dinner parties before. The only thing is you have to marinade for 2-3 days. This week I am trying the frozen, pre marinated miso cod from Costco. I have heard it’s great and mama was busy cleaning and had less prep time this week.
Tuesday: No Fold Blanket Dumplings I am using ground turkey.
Wednesday: I host Wednesday night dinner this week. I will make: Chicken Enchiladas Recipe - NatashasKitchen.com I’ll make the chicken in a crock pot rather than following the recipe using salsa and taco seasoning. I will also substitute greek yogurt for sour cream to cut calories and bump up the protein. *I plan to make an extra tray of these to freeze for a future week.
Thursday: I am traveling to CA wine country to celebrate Tom’s 40th, so I’ll be eating out the rest of the week. :)
Friday:

Crisp apple bloom pop. It’s one of those prebiotic sodas. This one tastes like sparkling apple juice, and it’s only 20 calories. I pour it into a cocktail glass and drink it as a treat when I am avoiding wine.
Next week’s episode will be much lighter than the burnout one. It’s 6 months until I turn 40, and I’m sharing my bucket list of things I am going to do and goals I am going to accomplish before then!
Have a great week.
-Sarah
